I am interested to understand how the structures of diverse polysaccharides allow plant cell walls to function. My research team studies enzymes and transporters in the Golgi apparatus to discover and alter mechanisms of polysaccharide synthesis. We apply these findings across many areas to improve health and sustainability, such as to improve dietary fibre and packaging materials from plants.
